I usually eat a big salad for lunch, often at work. I don't have a lot of time to use a ton of ingredients, so I've come up with a simple salad recipe. If you adjust the type of fruit and nuts, you can eat a version of this salad several days in a row without getting sick of it.


Ingredients

Spinach, apple, and almond salad

  • Lots of fresh organic* spinach (about 10 ounces)
  • One piece of sliced fruit (I usually use an apple, a pear, a clementine, or a few strawberries)
  • Small handful of nuts (about 1 ounce) (I usually use either almonds, cashews, or walnuts)
  • Balsamic vinegar

Preparation
Toss everything together and top with vinegar.


*On his website, Dr. Fuhrman lists produce that's important to buy organic, due to pesticide use. Spinach is #8 on this list. (But remember to wash it before you eat it!)
